Here is the recipe for the Cinnamon Muffins I posted about a few days ago.
It is from this cookbook: "Betty Crocker: Kids Cook!"We checked it out from the Provo City Library.
Ingredients:
1/2 c. sugar
1/2 c. milk
1/3 c. vegetable oil
1 egg
1 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. ground nutmeg
1/2 c. sugar
1 tsp. ground cinnamon
1/2 c. (1 stick) melted butter
MAKES 12 muffins
*Heat oven to 350'. Spray just the bottoms of each cup in the muffin pan with cooking spray.
*Put the first 1/2 c. sugar, the milk, and oil in a medium bowl. Stir with a wooden spoon until mixed. Add the egg and beat with a fork until mixed.
*Add the flour, baking powder, salt, and nutmeg to sugar mixture. Stir just until flour is wet (the batter should still be a little lumpy; you don't want it to be smooth.) Spoon batter into muffin cups until 2/3 full.
*Bake 20 to 25 minutes or until golden brown and toothpick comes out clean.
*While muffins are baking, mix the second 1/2 c. sugar and the cinnamon in a small bowl. Set aside.
*Microwave butter on high for 30 to 45 seconds until melted. Let cool a few minutes.
*Once muffins are done put muffins on cooling rack to cool for 5 minutes.
*Roll muffins in melted butter and then in the cinnamon-sugar to coat.
Serve warm
A FEW NOTES:
The instructions are very kid-friendly (using a wooden spoon and fork to mix the ingredients), but you could obviously get out your hand mixer. I found that the fork and spoon didn't quite mix the egg in...almost, but not quite.
Also, I don't think I would roll them in butter again. The muffins soaked up a bit too much of the butter. The flavor of the muffin is good enough that I don't think they need cinnamon-sugar all over them. I think I would brush on the butter and then dip in the sugar. But, try it either way.
There you go Heidi. There are your cinnamon muffins! Let me know what you think.

YUM! Cinnamon.... muffins....butter.... Mmmm. Thanks for sharing. I will have to check out that cookbook, I've had enough of Rachel Ray and her ground turkey!
Mmm, these look yummy.
I am laughing at Robyn's comment. I always have had enough of Rachel Ray. But I don't think that I will ever have enough of these muffins. yummy! I can't wait to try them. I think this will have to be an after school snack or breakfast on Saturday.
